Several ways.
Depending on the relative value of lights in your scene you can
1) set the ambient light to the color and then just increase it until you can see the dark side of the moon.
2) use a spotlight and just point it at the moon.
3) use a shader from digitalcarversguild that is applied only when the value of the illumination on the surface is less than a certain value (lit). This is the most accurate way, I think.
