I have used audacity and its quite useful especially when used with LAME
for making MP3s.

For more complicated arrangements I use Magix Music Maker. It is
inexpensive (currently $49 USD on sale with free shipping, available as
a demo or a download purchase, and is quite powerful but simple to use.
It supports multitracks, midi, all forms of digital audio, loops and has
built in instruments. It has a number of presets for audio and an audio
cleaning wizard. I barely scratch the surface with it.

Of note, if you are looking for CD-Burning software, Nero www.ahead.de
comes with audio software as well that is supposed to be quite good. I
have it but I got Nero for cd and dvd burning so I haven't fiddled with
the audio software.
