I like HyperCam by Hyperionics, for the PC. It's very affordable and
easy.

That's for recording sound and screen into AVI video, with choice of
codecs.

Once you're done recording you might want to rethink how many frames
per second, what quality video and sound etc... you want, and is it
gonna have toi be streamed and at what kbps rate etc... so you may
want to reformat it to another size, and rate, and codec, etc... so
you'll need tools like Quicktime Pro or MivieMaker or VirtualDub or
all of the aboce.

How you deliver the content has a big impact on the choices you'll
make for compression and size, frames per second, sound quality etc...

You might even want to pack the recorded video into a Flash stream. If
you can't afford Flash from Macromedia, check Xtivity, it has neat
tools to recompress video for various target connection rates.
