Since your students have found the tutorials too
difficult, it probably means you cannot allocate
enough learning time to explore animation in any
depth.

Consequently, I think you need to severely restrict
what you are asking them to animate. Give them a
file with a simple scene already build that has just
a few objects in the scene with set lighting and
camera position.

Then tell them the task you want them to accomplish,
something like putting a propeller on a helicopter
and then making the propeller spin in an animation
where the helicopter takes off and lands on top
of a building. That's it.

For some kids, it will take all of your class periods
to figure out how to accomplish the above, but
there will be some who can do all of that and want
to do more. They will want to find out how to paint
the aircraft a different color, build some other buildings,
etc. Help them with those tasks and introduce the
concepts they need to achieve what they want to
do.

You certainly can't teach them modeling, lighting,
camera movement, texture mapping, modifiers
and all of the other concepts in such a short time.
There will be a few kids who will yearn for more
but there will be others who will have had enough
by the time this project is done. For the ones who
want to do more, maybe they can meet at some
other time to take the next steps.
