I've answered half of my question. The problem only appears with NPR rendering
and the
polygons can easily be reversed.
To switch the normals orientation on a mesh:
1 Select one or more polygons on the mesh.
2 Use the menu Selection menu>Reverse Polygon Normals.

But is there a way to know what a polygon's orientation is? If not, a view mode
that shows
the front faces green and the back faces red would be helpful.

A couple of other changes I'd like to see in the CS5 VM:
- symetrical modeling (so when we edit one half of an object, the other half
updates
automatically) I know, we've asked for this for years...
- modifier preview button (so we can see what the modifier will do before we
commit to it)
